plant-based mushroom artichoke pizza
ingredients:
- whole wheat pizza dough
- pizza sauce
- 1 bell pepper
- 10 garlic cloves
- 1 pack of mushrooms
- 2 tomatoes
- artichoke hearts
- red pepper flakes
- pink himalayan sea salt
instructions:
insider trick: cook the dough for five to ten minutes prior to placing toppings on. then you won't have soggy crust with overcooked veggies!
follow instructions for cooking the dough, but only cook it half way. make sure to generously apply flour to your pan so the dough doesnt stick! while dough is cooking, saute garlic and bell pepper in a pan (you can replace oil with water when sauteing, making this a relatively low in fat meal. start with 1-2 cups of water and simply add more water as it evaporates. i promise you will LOVE the taste of oil-free veggies!). remove partially cooked dough from oven and cover it in pizza sauce. layer with sliced tomatoes, sliced mushrooms, artichoke hearts (we pressed as much oil out of them as we could using paper towels), and the garlic pepper mixture. top with red pepper flakes and himalayan sea salt to taste. cook until dough is solid.
then devour.
and cry because you probably should have made two pizzas (;
seriously.
all of us probably could have consumed an entire pizza each..

I wish I were a veggie pizza fan...but alas, I'm not. I'm also not the greatest at making things from scratch, SO I really like getting Papa Murphy's pizza - take 'n bake. It seems healthier because I can bake it at home and it's not super greasy like a lot of takeout pizza. Your pizza looked yummy though, I must admit :)

i love the trader joes pizza dough. soooo good. i have been loving white pizza lately. i hate tomatoes so getting to use ricotta makes it sooo much better. or i go with bbq chicken pizza.
ooo looks so yummy! I will have to try that for sure, well minus the mushrooms - yikes! :)
